Today…

Today was a good day.

We search for things. We work towards goals. We strive for the best. We push ourselves. We tire but still go on.

The makings of success? Yes, and no. Great things come unexpectedly, like ideas. Today was such a day; today was a good day.

Given that I have recently (like the past 6-7months) been inspired by Albert Adria’s Natura. I really have been contemplating having my take on it but only in savory dishes. I had to make a dessert (sorry can’t disclose what for) so I thought I might use this as a direction to get myself finally going after having put so much thought into it.

What’s nice? What’s interesting? What could taste nice? I decided to stick to the classics, and went for the “Black Forest”. Loved and enjoyed by so many. But how does one make it ‘cool’ since Heston B already made THE PERFECT Black Forest? Let’s face it, the main characters of Black Forest are: chocolate, cherries, kirsch and whipped cream.

So I broke it down…… Black… black… so that is the chocolate and cherries department… Something light like a frozen parfait of chocolate and kirsch, and to further enhance the kirsch character, a marinated cherry in kirsch should be nice. (So I already covered the 4 main characters, as parfait has whipped cream in it).

Now lets see…… Forest? Forest???

Lets make wood!! Tree bark!! Sand!! Fallen leaves! Then I got started.

Making of The Black Forest

Frozen parfait of chocolate and kirsch,
chocolate cherry “sand”, chocolate cherry leaves, chocolate “tree bark”,
kirsch marinated cherry.

Today I am happy; today was a good day.

  1. Man, you nailed it. It couldn’t say “black forest” (or Tim Burton) any better.

  2. Hi Shane,
Thanks !!! Never looked at it in a Tim Burton perspective … sounds like a good direction. Thanks!!
