food for thought 2 – still thinking…..

Previously i was mentioning  how culture plays a part in our eating habits…. then i went on to mention the “so called” cuisine styles of today and being open to new things (if you are a regular here at whitejacket, you will actually notice that i ALWAYS say this).

So with all this in mind i tried my hand at somthing (purely experimental-sorry guys).

I made some sushi ( nigiri and kunkan to be exact). http://sushi.pro/preparation.html#nigirizushi

BUT… with the influence of some unconventional ingredients not usually used at a sushi counter. Foie gras with Plum, Eel and Yellow Chanterelle and Eggs with Truffle.

Most reacted to the foie gras with a giggle and found it playful from the thought and look of it. And were suprised to find that it was not too rich and rather well balanced.

The Kunkan of Eel and yellow chanterelle was the ooposite. It looks like a regular kunkan (thinking well ok, eel and mushrooms..so?) but to thier surprise and mine.. the pairing left a very “meaty” taste, almost like it was not fish and mushrooms… hmmm…..?

And now for the failure…… usually having eggs (scrambled or your choice of poison) together with truffle and a roe ( again your choice of poison, usually fish or crab) would be nice to tuck into….HOWEVER……the Japanese omelet (tamagoyaki) was too sweet and the earthy truffle (ok ok i used the white truffle oil… enough already! ) with the salty salmon roe (ikura)…well lets say lucky it was the last one which we tasted….and even the look with the textured truffle oil was not too impressive…

People experiencing things which puts them out of their comfort zone tend to hold back, but if the overall experience is balanced by surprise, fun and most importantly good flavor pairings which makes sense in the end would be more than happy to join the chef in his vortex of creativity…. now to work on that darn egg one………food for thought – more thinking to be done…………..lol……
