january Chef feature: Julian Schwamberger
January 14th, 2010This month we travel to Austria where we find a hip and young new face in the rich Austrian dining scene.
Chef Patron, Julian Schwamberger of Hofwirt in Kammer.
I have had the pleasure of working along side this talent during our time together at the Burj al Arab in Dubai. Julian comes from a long line of upscale kitchens including the Palm Atlantis, Santi Santamaria and Castle Pichlarn which has an acclaimed 1 Torque Gault Millau. With his rich knowledge he uses his vision to bring his restaurant into the modern era of cooking. Unlike most young chefs around, Julian has great respect for the basic ingredients in which is the key to the success at Hofwrit in Kammer.
Where he truly believes in respect for great produce that works hand in hand with great execution. He does not use the usual flavored additions which you might see in some kitchens. Having been a well traveled chef, he combines his experience into his dishes with a little something extra ….. 
As mentioned, having worked along side him, he never fails to let his curiosity keep him warm in the cold stainless steel environment. Always very alert of things around him, however never the usual grumpy chef. And at the Hofwrit in Kammer he puts that delightful positive energy into his dishes. When a person dines, he/she can tell when a dish is executed with or without that level of interest and respect. You WILL find it in the dishes of Julian’s creation.
It’s that little something extra (which is also mentioned by the great Hervé This), that little something we all overlook, that little something called love.
His vision of the dining scene in Austria would be to go back to the basics of serving good honest food as more and more around dine out, they would expect to go to a place with honest food for the soul.
So if you are EVER in Austria and would like to be served honest food prepared with that little something extra, the Hofwrit in Kammer would be your answer to great food for the soul. I cannot wait to watch Julians career bloom further! We at Whitejacket wish him continued success!
