A small step forward …

Self expression is important. Artists expresses their thoughts through their work. Singer songwriters through their … well songs of course. With singing legends like John Lennon who wrote songs expressing his opinions on society during the “flower power” era. On sensitive topics like the Vietnam war and sending young men to the war front. Fighting a war and putting lives at risk. Trying to get society to take a step from all the political points of view, speaking sense, speaking peace and love. Well that was then and we all knew how that turned out. Nevertheless, (not getting myself into trouble with my opinions) the important things here is self expression. And as a cook it really is important to be able to have that freedom. Not being caged into that monotonous lifestyle at work (well for me at least). Self expression and taking it to a level where non would have thought of … now that would be something.

Awhile back, well I think it was somewhere in 2007 or 2008, It was when I heard the news(gossip?) that Albert Adria was working on a book of his own. Solely on desserts and how he sees it. It was interesting to see what he would come up with. As the minds at the bulli were always paving the way for the culinary world. Then finally late in 2008 when I had my first glimpse of this book I was truly blown away.

This book a reflection of the mind of a person, portraying his vision in his work (that being the desserts). From then on I knew that I wanted to have my own take on it as well, not to copy but my interpretation on the impact Natura had on me as a cook. And only to do it in savory dishes, as that would be a challenge with the odds of me failing really high (call me mad but I love it whenever the odds are against me … nothing better than a challenge). The first go I had at it was my interpretation a dessert in 2009, The Black Forest. But still wanted my interpretative take with savory dishes. So days became weeks and then months … and the following are what I have so far.

I like to note that I take no credit for this direction. I just did a lot of thinking … and worked myself to it.

I truly hope you enjoyed this little “preview” to what I have in stored for myself. And with a little hope and fingers crossed, you guys would be able to soon taste it all first hand. Till then, only Daniel and Teng have had that pleasure.  Happy Fooding !!!
